How to make Honey Apricot Glazed Corned Beef

If you are looking for a easy beef recipe, then you can try this corned beef recipe I was taught a couple weeks ago.

Its really good, so give it a try.

INGREDIENTS (Serving Size 6)

4 pounds corned beef, rinsed

1 cup water

1/2 cup strawberry preserves

1/2 cup apricot preserves

2 tablespoons honey

1/4 cup brown sugar

2 tablespoons soy sauce

Black Pepper to taste

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place corned beef in dish and add the water. Add the dish to a large baking tin which has been sprayed with non stick cooking spray. Cover with aluminum foil and bake for 2 hours; drain liquid.
  3. Combine the strawberry preserves, apricot preserves, brown sugar, honey, pepper and soy sauce. Spread the mixture over the corned beef.
  4. Bake uncovered at 350 degrees F (175 degrees C) for an additional 30 minutes, or until the meat is tender. Ensure that you baste occasionally with pan drippings.
